Mascarpone Cream Parfait

1 – 8 oz container of Mascarpone Cheese
1 - 1 ½ cups Heavy Cream
¼ cup sugar
1 tsp pure vanilla extract
Fresh berries of your choice
Mandarin Slices

Blend the Mascarpone Cheese, Heavy Cream, and sugar in a chilled bowl until desired consistency. The consistency should be similar to yogurt. (If you over mix, it will become the consistency of whipped cream). You could separate the batches if desired and use part for a parfait and part for a whipped topping). Add the vanilla and blend gently. Place bowl in the refrigerator until ready to create the parfait and serve.
