Wild Rice Patties

2 cups cooked wild rice
c grated sharp cheddar cheese (or other cheeses such as smoked gouda, havarti, Monterey jack, swiss, etc.)
2 eggs, lightly beaten
2/3 c fine, dry cracker crumbs (I use seasoned crackers)
1 tsp salt
Dash pepper
Optional : I add additional herbs such as herb de provence
Vegetable or Olive oil

Combine the wild rice with the cheese and eggs. Stir in 1/3 cup cracker crumbs, salt and pepper. Mix well and shape into patties.

Dip both sides of the patties in the remaining 1/3 c cracker crumbs and brown on both sides in a small amount of oil in a skillet on medium high heat.

Makes 4 patties.
